Nutrition for Humans
The main thing to remember here is to eat REAL FOOD. And yes, the title of my upcoming book is The Real Food Diet. Real food means the whole, unadulterated, toxin-free food items upon which our species evolved and which, according to Dr. Schwarzbein, can be hunted, fished, dug, plucked or milked. Real food is nourishing to the point where Hippocrates stated thousands of years ago: "Let thy food by thy medicine and thy medicine, thy food." It's that simple.
In the 1930's, researcher and dentist Dr. Weston Price travelled the globe searching out traditional peoples and diets. He found those who kept to their traditional diets were far healthier, with better bone and dental occlusion, than those individuals who forsook traditional diets for new-fangled Western diets consisting mainly of highly processed, sugary foods. The SAD (Standard American Diet) resulted in serious malocclusion and facial defomities. His book, Nutrition and Physical Degeneration, is still considered seminal within the holistic nutritional field. Mary Enig, PhD, a leading authority on fats, and Sally Fallon co-authored an equally seminal book, Nourishing Traditions (for author's interview: www.mercola.com/2003/mar/12/sally_fallon.htm), plus founded the Weston Price foundation. Their website, www.westonaprice.org, contains a plethora of valuable information. It is my personal belief that the Factor X of which Dr. Price spoke so highly, is none other than newly discovered Omega 3 fatty acid.
Aside from being produced chemically and frequently genetically modified especially in the cases of soy and corn, most modern food items have little to do with reality but have been further chemicalized, devitalized and fractionated until there is little to no resemblance to Real Food whatsoever. Of course most young people today may never have even had Real Food in their lives but be familiar only with the Standard American Diet which is indeed SAD.
It is always wise to take into consideration age, gender, activity-level and even ethnic background when deciding which Real Foods are best for you as an individual, but in general, work your personalized diet plan around these considerations which are a very slimmed down version of Chapter Two, Book Three of Living Energetically.
Foods to eat . . .
- WATER - Far too many people are simply dehydrated, not ill or dehydrated,
not hungry. Our natural metabolic processes alone require a minimum of 8-10
8-oz. glasses of pure water per day to function optimally. Some of this fluid
may come from fruits, vegetables, soups, etc., but other fluids such as coffee
and tea can be diuretic and actually increase our need for pure water. Pop,
electrolyte drinks,and energy drinks are all highly acidic and chemicalized.
Popular fruit drinks are the same but even freshly squeezed fruit juice is
deleterious to the pancreas and can contribute to both obesity and diabetes.
Pure water is it! For those used to taste in their water, pop an organic/herbal tea bag (like Celestial Seasonings Lemon Zinger) into your water jug or add the juice of one lemon. - GO ORGANIC - The organic (or bio-dynamic and/or sustainable) aspect is
very important. Not only will you avoid loads of nasty toxins, but studies are
showing that organically grown produce (the ONLY kind available until the
twentieth century!) contains far more nutrients than their agri-business
counterparts, www.ota.com/organic/benefits/nutrition.html. However, do be
aware of some of the big box "organic" foods available in chain stores.
Frequently these can be quite marginal and are still shipped long distances
thus decreasing their nutritional value while increasing their carbon footprint.
Even if a food is labeled "organic", if it does not look healthy and glowing, walk
right past it!

If you do not or cannot grow your own organic produce, search for local
CSA (Community Supported Agriculture - www.greenpeople.org/csa.htm)
organic and/or bio-dynamic farms near you. These generally work on shares whereby a client/customer pays an annual fee (share) and then is enabled to purchase farm-fresh produce, frequently much of it is heirloom, at pick-up sites throughout the growing season; a few may offer home delivery for an additional fee.
Many individuals have also found their local Farmers' Markets supply an
excellent source of local, organic produce, as can some health food stores. If you are unable to find local sources, consider these national websites or search out your own: www.boxedgreens.com, www.farmfreshtoyou.com, or www.diamondorganics.com.
- GO ALKALINE - A study reported on by the American Journal of Clinical
Nutrition (March 2002) concluded that "a mild, systemic metabolic alkalosis, which results from a chronic net base-producing diet, is the natural and optimal state of humans." Many holistic practitioners believe that a diet consisting of 80% produce (alkaline or base) to 20% other (acid: most grains, legumes, nuts/seeds, animal products, etc.) provides the best pH or alkaline to acid ratio. However, it is my experience that each individual needs to come to their own balance which means for some, the ratio may be closer to 60:40.

Regardle/ss, plenty of good, organic produce is essential for all to help
maintain appropriate alkaline pH balance which is critical for bone health. One of the main ways in which the body buffers acid-forming foods is to take calcium from your bones and use it to neutralize the remnants of acid-forming foods. If your body is repeatedly forced to do this, your bones may be weakened. Most important is to avoid modern "foods" that are the highest contributors to the rampant osteoporosis this country is experiencing are the highly acidic:
- Artificial sweeteners
- Soft drinks (pop)
- Sugar
- Cookies, cakes, and pastries made with white flour
- Table salt (bleached white salt)
- Alcohol
- Coffee
- GO RAINBOW - A simple way of obtaining the widest variety of nutrients
(including phytochemicals which help build collagen for healthy bones and glowing skin), alkalising your body, and enjoying your minimum of seven servings of produce per day is to et a rainbow. Choose a minimum of one fruit and vegetable from each of the seven color groupings:
- Red - Lycopene, phytoene & phytofluene - Beets, raddichio, radishes, red
lettuce, red onions, red peppers, tomatoes (fresh, dried, canned) - blood
oranges, cherries, cranberries, pink/red grapefruit, persimmons,
pomegranates, raspberries, red apples, rhubarb, strawberries, watermelon - red chili peppers, paprika
- Orange - Cryptoxanthin, alpha- & beta-carotene - Carrots, fresh yellow
corn, pumpkins, rutabagas, sweet potatoes, yellow/orange peppers, yellow squash, yellow/orange tomatoes - apricots, bananas, cantaloupe,
mangoes, papaya, peaches, pears, tangerines - cinnamon, saffron
- Orange/Yellow - Bioflavanoids - Grapefruit, lemons, limes, oranges,
nectarines, pineapples, tangerines, and other citrus – tumeric, cumin,
ginger - Green/yellow - Lutein, chlorophyll, zeaxanthin - Artichokes, asparagus,
avocado, beans, cucumbers, green beans, leafy greens (collards, endive, lettuce, mustard greens, spinach), peas, snow peas, zucchini - kiwi, green apples, green grapes - parsley & all green herbs, pepper grass, green tea etc.
- Green - Sulforaphane (cruciferous family) - Brussels sprouts, broccoli,
fermented sauerkraut, green cabbage
Blue/Purple - Anthocyanin, flavonoids - Eggplant, red cabbage,
rutabagas - blackberries, blueberries, boysenberries, figs, plums/prunes,
purple/red grapes - White - Allicin (the allium family) - Garlic, onions, etc. & hexose Jerusalem
artichoke, jicama, kohlrabi, mushrooms, turnips, white potatoes - bananas
- white peppercorns
Eating varied produce daily helps make eating a tasty adventure while providing
all of the known and unknown phyto-nutrients and such that are necessary for

other fresh/frozen fruit (such as berries) and a handful of greens; have a
hearty raw or cooked soup or salad for lunch, and include a variety of veggies
with your dinner. To really blend those greens, a heavy-duty blender, like a
VitaMix, is needed, although many have
found the small sized Magic Bullet blender (www.buythebullet.com) to be just
as effective and far more kind to both the average counter-top and checkbook.
Or get a juicer and make some delicious fresh vegetable juices like your
own Veg-8 juice (1 @ tomato, carrot, celery stalk, handful spinach (or kale
leaf, etc), 1/2 red pepper, 1/4 cucumber, 1/2 cup chopped cabbage, & 1 green
onion - or to spice it up, add seeded jalapeno) and many others I suggest in
my Living Energetically book with many more upcoming in my Real Food Diet.
We have found our Omega 8003 juicer which presses the juice from the veggies rather than by using centrifugal
force which can heat it, to be very effective, quiet and easy to use and clean.
In fact, fresh vegetable juices can be so powerful they are frequently
used in cleansing fasts and even as a major part of some cancer therapies
such as the Max Gerson, MD program (www.gerson.org). To read about how

- GO GRASS-FED ANIMAL PRODUCTS - At least some animal proteins and
fats are vital for optimum health but there are vast differences in nutritional
quality of meats, poultry, dairy, etc.

Agribusiness animal products are loaded with toxins such as hormones,
antibiotics, and all the chemicals in the feeds. Organic animals are far better since they receive only organic feeds and no hormones or antibiotics. However, free range animals are the closest to nature since they receive no grain. This is good because it is the grain feeding that changes their Omega 3 to 6 ratios from the beneficial 1:1 ratio to the harmful 1:20 to 1:50! This skewed ratio increases inflammation (only Omega 3's reduce inflammation) in the body turning the beneficial animal products from alkaline to acidic. www.texasgrassfedbeef.com/omega_3_fatty_acids.htm. You'll also find that ONLY animal sources of Omega 3's contain the long- chain, beneficial EPA & DHA fatty acids so necessary for the brains of geriatrics and children alike. In fact, insufficient amounts of EPA & DHA Omega 3 fatty acids in the diets of pregnant women result in premature birth, low birth weight, and hyperactivity in children. Human bodies require the animal-based
forms while even the best plant sources (Chia is the best) contain only ALA, which, in excess, can actually exacerbate various forms of cancer. Most other vegetable fats (ie: vegetable oils) are very high in Omega 6 fats, the ones that lead to inflammation and, studies now show, various diseases, aging and even dementia. All the studies showing the harmfulness of animal products and fats are done with acidic agribusiness products rather than true traditional, alkaline pastured animals. An excellent source of red meat is bison but even some
bison are feed-lot finished so make sure you purchase strictly pastured-only stock for bison, beef, and even chicken, eggs, and milk which should only be drunk raw. - GO RAW - Back when Dr. Weston Price was doing his research, Dr. Francis M. Pottenger, M.D. was also doing some research on raw diets (www.ppnf.org). His book, Pottenger's Cats, showed the relatively fast decline in breeding ability (among other criteria) of cats fed cooked diets. Now cats are obligate carnivores, but any animal, including chimps (did you know they hunt and eat animals?) who utilize animal protein, should heed his warning.

Certainly humans evolved not only on fruits, herbs, and vegetables, but
also on raw animal products. Prior to fire, they were thrilled to eat raw eggs when they found them, but also, when presented with the results of their hunting prowess, they devoured entrails and organs immediately (just like wolves) and sometimes "hung" haunches to ripen a bit. American Indians, along with most hunter-gatherer societies, gorged on fresh raw liver, heart, kidney fat and sometimes even eyeballs and brains. Since our bodies are all the same, we also require some raw meats/dairy; cooking destroys their enzyme values so they become indigestible with all the attendant ill-health we see today.
We also see good health happen when we feed our pets raw!
Many "modern" people are aware of this. My 1960's mentor, Dr. Louisa
Beatty, D.C., N.D. (widow of the famous Homer Beatty, N.D.), suggested
adding 1-2 oz daily of half-thawed liver to my daily smoothies to a pregnant me. The difference in my energy level was astounding and very welcome. Contemporary studies with rats proved the addition of raw liver allowed them to swim something like 5 times longer than non-liver-fed rats. Dessicated liver was one of the whole food supplements heralded by J.I. Rodale, founder of Prevention Magazine.
Another modern proponent of this RetroRaw diet is body builder Dawn
Blacklidge (Kieba) who owns the Hawaiian Body Temple Boot Camp where she introduces all her campers to the raw food life-style. Her website is awesome and she has graciously allowed me to post a number of her most camper-enjoyed recipes - see her link above.
- GO FISH? - Every sort of sea life imaginable was traditionally the source for incredible nutrition. However today our seas are so polluted that eating seafood is a risky business indeed. So risky that the FDA itself has warned pregnant women about the mercury in tuna fish! However, while bottom dwellers, shellfish and most large fish are now dangerous, small fish such as anchovies, sardines, and even the wee little krill are still low enough on the food chain that not only do they not build dangerous levels of toxins, but they are extremely healthful and a superior source of healthful Omega 3's. The only larger fish that is safe is some wild salmon and the occasional river trout.

A good source for uncontaminated fish is www.vitalchoice.com. If you're
not eating at least 3 good servings of safe, fatty fish per week (or equally
good pastured beef/bison), seriously consider taking Carlson's fish oil/cod liver oil/salmon oil capsules (or liquid) daily, Mercola's krill oil, or Dr. Ron's fermented fish oil. This will help your Omega 3 ratio plus supply your body with Vitamin D so necessary for bone health and so much in short supply today because of sun block and sun glasses.
- NATURE'S SNACKS - We certainly need not turn to processed snacks, which
have become the expensive, and unhealthful norm, when we understand that
nature has provided us with perfect, wholesome and tasty snacks in the form
of nuts and seeds. Add some dried berries or other dried (unsulfured only) or
fresh fruit, and you have essentially a meal-replacing nutritious snack that can
easily stave off hunger pangs by maintaining appropriate blood-sugar levels.
Our favorite snack is a great trail mix made by mixing together equal-by-
volume amounts of: almonds, walnut pieces, sunflower seeds, pumpkin seeds,
dried blueberries, dried cranberries, dried currants/rainins, and finely shredded
raw coconut. Mmmm, mmmm, good! One of the finest "snack" foods being
rediscovered is the ancient chia seeds of the Aztecs. Read more about this

- GRAINS & GLUTEN - Grains are a relatively recent addition to the human
diet, and as such, in certain individuals, cause some problems. Usually it is the
gluten that is the culprit and it is gluten that is behind so many allergies, food
sensitivities, and digestive problems from Leaky Gut Syndrome to
outright Celiac Disease (www.celiac.com) and so very much in between. In fact,
many researchers are now proposing that gluten toxicity and LGS are very
much at the base of most modern disease states.

Allan Spreen, M.D. offers this mnemonic device to help remember the
four primary sources of gluten: BROW. That's Barley, Rye, Oat and Wheat. If you're gluten sensitive, give those four a wide berth. Many with gluten sensitivities also need to steer clear of modern dairy (but not necessarily raw from pastured cows) and even corn products.
Unfortunately, gluten is contained within a host of processed foods and
other items making it extremely difficult to avoid if eating the Standard
American Diet. According to the Celiac Disease Foundation (CDF), ingredients that may tip off hidden gluten content include:
- Unidentified starch
- Modified food starch
- Hydrolyzed vegetable protein (HVP)
- Hydrolyzed plant protein (HPP)
- Texturized vegetable protein (TVP)
- Malt and other natural flavorings
- Binders, fillers, excipients, extenders (This includes certain dietary
supplements and medications that use binders and fillers which is why
you sometimes see the statement "no binders or fillers" printed on
supplement containers.)

However, many whole grains without gluten can provide some great
nutrition, necessary fiber and provide good taste besides. We choose to eat mainly the heirloom grains such as millet, quinoa, buckwheat,amaranth, rice/wild rice, and use arrowroot for thickening rather than cornstarch. These all also have the benefit of being alkaline rather than acidic such as the ever- present wheat (including durum, semolina, kamut, spelt, and triticale) and corn found in one form or another in almost every single processed product. The ancient art of sprouting grains before using lessens their deleterious impact on metabolism amazingly with most individuals; it's so easy, you can do
it yourself using only organic whole grains. Best is to consume sprouted grains raw in salads/pilafs or even as a nutritious morning cereal with fruits and nuts/seeds. The best way to cook grains is to cover with fresh water after soaking/draining by about 2+", bring to a slow, rolling boil, cover and turn off the heat. Your grain will be ready to eat in about an hour with no harm to the nutrient value. A good source for sprouted grain products and yeast and/or gluten-free baked goods is Food For Life Baking Co,.
- LUSCIOUS LEGUMES - The title of a chapter in my upcoming book, legumes
are indeed luscious and healthful (containing loads of phytonutrients and
fiber). This inexpensive gold mine can be used as snacks (as in roast chickpeas
or various bean dips), salads (taco salad for one), main dishes (a plethora of
soups, stews & chilis), sprouts for salads/wraps, and even dessert (see my
Blender Black Bean Brownies in the May 2007 Newsletter). Because legumes
require a certain amount of processing to make them edible, many of us keep
some good, organic canned beans such as provided by Eden (www.edenfoods.
com) on hand for ease of use.

For those who wish to purchase delicious and unique dried, organic,
heirloom beans capable of being sprouted (talk about a survival food!), visit www.ranchogordo.com. If you use the dried beans, be sure you always soak them overnight and pour off the soaking water before cooking (or sprouting); this negates potentially harmful phytates and also reduces the gas-producing side-effect so well known with beans. Beans also have the ability to maintain blood sugar levels so are very helpful for diabetics. Sprouting beans is also possible although I've had the best success with lentils which are simply delicious!
- HEALTHY DIGESTION - A healthy gut is considered by many holistic health care practitioners to be a major factor in good health. It is the beneficial bacterial colonies in our intestines which complete digestion and which produce so many necessary nutrients such as B vitamins. Unfortunately, aside from laxatives, ant-acids and their ilk are the most highly prescribed and OTC (over- the-counter) drugs requested, followed closely by headache remedies. Most of these drugs would no longer be necessary if we were toxin-free and supported our digestive tracts the way folks have from early on: with friendly bacteria.

The culture, or fermentation, of dairy and vegetables was discovered not
only to preserve these foods for long winters, but also to keep the digestive tract healthy which also kept the immune system healthy and strong. I just wonder if we still consumed real cultured (as opposed to the processed imitations commonly available) raw dairy (kefir & raw milk cheeses), various vegetables (sauerkraut & kim chee), fruits (cultured chutney) and even grains (sourdough), if we'd still be worried about e-coli and other common modern micro-organisms which are causing so much distress today. Foods to avoid . . .
- All processed foods (including "organic" varieties - they are still fractionated!)
except perhaps for some canned organic beans or frozen organic vegetables
and fruits. Even most processed foods from the health food store have very
little food value, if any, for the amount you pay.
- All white flour and white sugar products which includes most breads,
cereals, flours, etc. with which most Americans fill their grocery carts.
- Most vegetable oils. All are high in Omega 6 which leads to inflammation, and
most are highly chemicalized in their extraction process and/or from genetically
modified sources such as canola oil. [The only safe oils are cold-pressed organic Extra Virgin Olive Oil, walnut oil (excellent as a salad dressing), macadamia nut oil and avocado oil for cooking, and the best of all for cooking, coconut oil. - All so-called "lite" or "diet" foods, especially those with artificial sweeteners
or meat substitutes. They don't work ... as a nation, we're even fatter than
before these became so popular, plus they load our systems with chemical
toxins.
- All pop, canned or bottled juices, juice drinks, even popular electrolyte or energy drinks; all are loaded with chemicals, sugars and, in the case of the last, possibly even more caffeine than pop. Health food store juices have been pasteurized in order to bottle them which destroys their value.
- Most fast-food and restaurant fare since that is all agri-business grown and
frequently loaded with additives including MSG and preservatives on the salad
making.
- Pasteurized, homogenized dairy products even if "organically" grown. The destruction of the enzymes during pasteurization and the fats during homogenization renders dairy indigestible and worse than worthless. [Raw dairy products from pastured-only animals are an entirely different situation being quite healthful to the point that even those with milk allergies can frequently consume them and even those with lactose intolerance can consume Omega 3 rich raw butter, cheese and cream.]
Ideally . . .
You'd grow your own produce and eat it fresh from your garden. You'd grow your own animal products on natural fields and eat their products with
blessings and thankfulness. Of course that is an absolute pipe dream for most but there is a wide variety of truly Real Foods available via the internet if you cannot locate local sources. Supplements
Many individuals still insist we need no supplementation. I disagree unless you are consuming an all-raw, organic, grass-fed diet! Are you? But even with an optimum diet, most foods are still deficient in nutrients because our soils are deficient in nutrients.
The very best general supplementation I have discovered is to eat oncentrated
"super foods" that still retain life vitality. Some examples include:
- Freshly-pressed organically vegetable juices (with lots of greens in them) or
even some of the "greens" powders such as Dr. Ben Kim's Greens. One way to
take his greens is with his Green Sea Smoothie consisting of a handful or two of
frozen, sliced bananas, 1 teaspoon each his Greens powder and his Acerola
cherry powder, and enough milk of your choice to make the smoothie to your
favorite consistency. Home-grown sprouted seeds/beans also contain high
amounts of super nutrition and can be grown for pennies. Another terrific
option offered in capsules is Dr. Ron's Pure Synergy.
- To increase the antioxidant qualities supplied by the greens, eat dried berries
that are available all year. The drying concentrates their beneficial properties. No
need for expensive imported berries and magical juices that are the current fad.
Our own organically-grown American blueberries and cranberries are among the
best anti-oxidants available. Apricots are another powerhouse but be sure to
get those unsulfured.
- Powdered medicinal mushroom blends can also help increase the immune system naturally even when confronted with various serious diseases. One excellent source is www.mushroomscience.com, another is www.fungus.com, while a super tincture is available from www.waiora.com. www.drrons.com supplements also offers powdered mushrooms to be used as a concentrated food. Do be aware that some people are allergic to mushrooms, just as to almost any food item, so care must be taken.
- Cod liver oil such as Carlson's (available in most health food stores or go to www.carlsonlabs.com), antarctic krill oil (as suggested by Dr.Joseph Mercola, www.mercola.com), or Blue Ice fermented cod liver oil capsules available from www.drrons.com supplements, for the tremendous benefits of the Omega 3's
EPA & DHA which are not available in plant sources which contain only ALA, but
which are available in wild or grass-fed-only cattle, bison, elk, deer, etc.
- Someone suffering from anemia or low B12 (such as long term vegans, and
actually, most of us) might consider taking some Carlson's dessicated raw free-
